Chia Pudding

2 tbsp chia seeds
1/2 cup coconut milk (or almond milk)
1 tsp honey or maple syrup (optional)
1/4 tsp vanilla extract (optional)
Toppings: Fresh berries, unsweetened coconut flakes, or seeds

In a jar or bowl, combine chia seeds and coconut milk (or almond milk).
Add honey, vanilla extract, and stir to combine.
Let it sit in the fridge for at least 4 hours or overnight to thicken.
Before serving, top with fresh berries, coconut flakes, or any other seeds you like.
