Healing Diet Chili
1 lb grass-fed ground beef (or any ground meat you prefer, such as turkey)
- 1 can (15 oz) kidney beans, black beans, or pinto beans (rinsed and drained) or 1 ½ cups cooked beans
- 1 cup bone broth (or water if you don't have it)
- 1 medium sweet potato, peeled and diced
- 1 cup chopped kale or spinach (fresh or frozen)
- 1/2 onion, diced (optional)
- 2 cloves garlic, minced
- 1 tbsp olive oil or coconut oil
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp cinnamon (optional, for a unique depth of flavor)
- 1 tbsp apple cider vinegar (or lime juice for a zesty kick)
- Salt and pepper to taste
- Fresh cilantro (optional for garnish)
1. **Brown the Meat**: Heat a large pot or Dutch oven over medium heat. Add the olive oil (or coconut oil). Once hot, add the ground beef (or your choice of meat) and cook until browned, breaking it up with a spoon as it cooks. This should take about 5-7 minutes. Drain excess fat if necessary.
2. **Add the Aromatics**: To the meat, add the diced onion (if using) and minced garlic. Sauté for 2-3 minutes until fragrant.
3. **Spices**: Add cumin, turmeric, and cinnamon (if using) to the pot. Stir to coat the meat and onions with the spices, and cook for another minute to bring out their flavors.
4. **Add Sweet Potato and Beans**: Stir in the diced sweet potato, beans, and bone broth (or water). Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20-30 minutes, or until the sweet potatoes are tender.
5. **Add Greens**: Once the sweet potatoes are tender, stir in the kale or spinach and simmer for another 5 minutes until the greens are wilted and well incorporated.
6. **Adjust Seasoning**: Add apple cider vinegar (or lime juice), and season with salt and pepper to taste. Stir well and adjust the seasoning as needed.
7. **Serve**: Spoon the chili into bowls and garnish with fresh cilantro if desired.
